Kysil Fruit Drink

Kysil is the oldest way of turning a handful of berries into a proper drink, and all of its mechanics live in the starch. One rule matters: once the starch goes in, the pot never boils again. Boiling breaks the starch chains, and a drink that was thickening turns back into water.

Ingredients

Makes: about 1.5 l, 6 glasses

Method

  1. Step 1: Cook the berry base

    Cover the berries with 1.5 l of water, bring to the boil and simmer 10 minutes, until they have given up their colour and the water tastes of fruit.

  2. Step 2: Strain and sweeten

    Strain through a sieve, pressing the fruit, return to the pot and add the sugar and lemon juice. The acid is not only for taste — it keeps the colour bright.

  3. Step 3: Slake the starch

    Stir the starch smoothly into 150 ml of cold water — it must be cold, or it sets into lumps in the cup.

  4. Step 4: Pour it in slowly

    Lower the heat until the boil stops and pour the starch in a thin stream, stirring without pause. It thickens within 30–40 seconds.

  5. Step 5: Warm but do not boil

    Hold it a minute over low heat and take it off. Not one bubble: a boiled kysil thins back out and never thickens again.

  6. Step 6: Cool it uncovered

    Pour into a jug and leave 30 minutes, stirring a few times so no skin forms on top. Serve warm or cold.

Tips & variations

  • Tip

    Thickness is simply the starch ratio: 30 g per 1.5 l gives a drink; 60 g gives a kysil eaten with a spoon; 100 g and up is jelly on a plate.

  • Tip

    Potato starch gives a clear gloss, cornflour a cloudy whiteness. For fruit kysil use potato.

  • Variation

    Milk kysil: use vanilla-scented milk instead of the fruit base, half the starch, and serve it only warm.

  • Storage

    Two days covered in the fridge. It thickens slightly more when cold — stir before serving.
