Korzhyky Milk Shortbread

Anyone who went to school in the nineties knows the taste of a korzhyk, and it can be reproduced exactly. The trick is not to overwork the dough: shortbread is brought together in seconds. Every extra minute of kneading makes it hard instead of crumbly.

Method

  1. Step 1: Cream butter and sugar

    Beat the soft butter with both sugars for 2 minutes until pale. The butter must be soft, not melted, or the rounds spread on the tray.

  2. Step 2: Add egg and milk

    Mix in one egg and the milk. The mixture may look split — that is fine, the flour brings it together.

  3. Step 3: Bring the dough together fast

    Add the flour, baking powder and salt and work for 20–30 seconds, just until it forms a ball. Long kneading develops gluten and makes the biscuit hard.

  4. Step 4: Chill

    Wrap and refrigerate 30 minutes. Cold butter in the dough is what gives the crumbly texture these are loved for.

  5. Step 5: Cut the rounds

    Roll to 1 cm and cut 8–9 cm circles with a glass. Thinner ones dry out, thicker ones stay raw in the middle.

  6. Step 6: Glaze and bake

    Brush with beaten egg and bake 13–15 minutes at 190 °C until the edges are golden. The centre stays pale and finishes as it cools.

Tips & variations

  • Tip

    Too much flour is what makes them hard. The dough should be soft and slightly tacky — flour the bench, not the bowl.

  • Tip

    For the canteen shine, glaze with yolk and a spoon of milk rather than whole egg: the white dries matt.

  • Variation

    With raisins or nuts: 80 g folded in at the end. With poppy seeds: 2 tbsp in the dough and a scattering on top.

  • Storage

    A week in a closed tin — and they genuinely improve on day two. The milk keeps them from going stale quickly.
