Belgian Waffles
Belgian waffles differ from ordinary ones in their deep pockets and in the batter, which is raised with yeast rather than baking powder. Yeast brings flavour and large bubbles; whipped whites bring lightness. That is why the waffle comes out crisp outside and nearly hollow inside rather than dense like sponge.

Method

Step 1: Mix the base
Combine the warm milk, yeast, sugar, yolks, salt and vanilla, add the flour and whisk smooth. The batter will be loose, like thick cream.

Step 2: Add the butter
Stir in the melted but not hot butter. Hot butter cooks the yolks and leaves white threads through the batter.

Step 3: Prove for an hour
Cover and leave somewhere warm until bubbly and risen. This is where the characteristic waffle flavour comes from.

Step 4: Fold in the whites
Whip the whites to soft peaks and fold them in with a spatula in two additions, lifting from the bottom. Circular stirring knocks them flat.

Step 5: Heat the iron
Heat the waffle iron properly and grease it the first time. A cold plate gives pale waffles that stick.

Step 6: Bake until the steam stops
Half a ladle per waffle, lid closed. It is done when steam stops escaping at the sides, usually 4–5 minutes. Open it earlier and the waffle tears in half.

Step 7: Keep them on a rack
Stack them on a rack rather than a plate: in a stack the steam softens the bottom ones within a minute.

Tip
The batter can rest overnight in the fridge instead of an hour in the warm — deeper flavour, and in the morning only the whites are left to fold in.

Tip
For extra crispness, replace 50 g of the flour with cornflour. It develops no gluten, so the crust comes out thinner and more brittle.

Variation
Liège waffles are denser and sweeter, with pearl sugar that caramelises in the iron; their dough is stiff, closer to a bun dough.

Storage
A day in a container; revive in a toaster or at 180 °C for 3 minutes. Frozen waffles come back straight from the freezer in 5.
