Homemade Cappuccino

A cappuccino differs from a latte in geometry rather than taste: one third espresso, one third milk, one third foam, all in a 150–180 ml cup. That is why the coffee comes through more, even though there is the same amount of it. The aim is not a tall cap but a dense cream that leaves a mark on the side of the cup.

Makes: 2 cups of 160 ml

Method

  1. Step 1: Warm the cups

    Rinse them with boiling water and wipe dry. In a cold cup a cappuccino is lukewarm within a minute and the foam collapses twice as fast.

  2. Step 2: Pull the espresso

    Thirty millilitres into each cup. Freshly ground coffee gives a dense caramel crema that holds the foam above it.

  3. Step 3: Whip air into the milk

    For the first 5 seconds keep the steam tip just under the surface — you should hear a light hiss, which is air going in. Then sink it deeper and heat to 60–65 °C.

  4. Step 4: Polish the foam

    Tap the jug on the counter and swirl it until the milk looks like wet paint with no large bubbles left.

  5. Step 5: Pour and dust

    Pour straight away, before the milk separates: deep into the centre first, closer to the surface at the end. Dust with cocoa through a sieve if you like.

Tips & variations

  • Tip

    Foam collapses within a minute, so build the drink immediately. Milk that has stood and separated can be re-foamed once — after that it will not hold at all.

  • Tip

    The classic cup is 150–180 ml. In a big mug the same shot disappears and you get warm milk with a coffee note.

  • Variation

    For a cinnamon cappuccino stir a pinch into the milk before steaming rather than over the top — the aroma then runs through the whole drink.

  • Storage

    It does not keep. Leftover milk can be reheated for cocoa, but it is no longer any good for foam.
