Mocha

The difference between a café mocha and a good one at home is what it is made of. Syrup adds sweetness and nothing else; chocolate melted into hot milk adds body, bitterness and a long chocolate finish. It takes exactly three minutes longer.

Makes: 2 glasses of 250 ml

Method

  1. Step 1: Melt the chocolate in milk

    Warm 100 ml of the milk with the chopped chocolate over low heat, stirring, until smooth. Do not boil it: chocolate turns grainy in boiling milk.

  2. Step 2: Add the rest of the milk

    Pour in the remaining milk and bring the mixture to 60–65 °C. Add sugar if needed — dark chocolate usually asks for some.

  3. Step 3: Pull the espresso

    Thirty millilitres into each glass. Hot coffee at the bottom marries with the chocolate milk instead of separating from it.

  4. Step 4: Combine

    Pour the chocolate milk over the coffee, leaving 2 cm at the top, and stir — unlike a latte, a mocha is not layered.

  5. Step 5: Finish with cream

    Spoon whipped cream on top and scatter grated chocolate. Cream holds for five to seven minutes, so add it just before serving.

Tips & variations

  • Tip

    Use chocolate between 55% and 70%: milk chocolate is cloying, and 85% turns the drink so bitter that the sugar needed to fix it defeats the point.

  • Tip

    Cocoa works too: 2 tsp of cocoa and 2 tsp of sugar per cup, but mix it to a paste with a spoonful of hot milk first or it stays lumpy.

  • Variation

    Mint mocha: warm the milk with three or four fresh mint leaves and strain before adding the chocolate.

  • Storage

    The chocolate milk can be made ahead and kept two days in the fridge, reheated by the cup. The finished drink does not keep.
