Chirashi means scattered sushi: rice in a bowl and, over it, everything a roll hides inside. In Japan it is a celebration dish made at home, because it looks festive and the work in it amounts to slicing.

What to use instead
There is no need to buy masago — chirashi lives perfectly well without roe. Cooked carrot in threads, green peas or pickled cucumber bring the colour instead.

Step 1: Fry a thin omelette
Beat the eggs smooth with a fork and pass them through a sieve — that is what makes the omelette even, with no ropes of white in it. Pour a thin layer into a lightly oiled pan, cook for a minute over low heat until the top sets, and lift it out without turning it.

Step 2: Shred the omelette
Roll the cooled omelette up and cut it across into 3 mm ribbons. Loosen them with your fingers and you have the yellow threads the Japanese call kinshi tamago, which is what gives chirashi its colour.

Step 3: Prepare everything else
Cut the salmon into 5 mm slices on an angle, the cucumber into thin half-moons, the avocado into slices and fan them out. Butterfly the prawns. All of this should be ready before you go anywhere near the bowls.

Step 4: Spread the rice
Divide the warm rice between four wide bowls and level it without pressing. It should lie 3–4 cm deep: in chirashi the rice is eaten together with the topping, not dug out from under it.

Step 5: Lay the toppings in blocks
Do not mix anything. Give each ingredient its own patch: a band of salmon, a fan of avocado beside it, then cucumber, a heap of omelette threads, the prawns, a spoon of roe. Chirashi looks good precisely because of those borders.

Step 6: Finish and serve
Scatter the sesame and the nori threads on just before serving — nori softens within minutes once it meets moisture. Serve the soy sauce separately in a little dish: poured over, the rice takes it all up and turns salty.

Tip
The rice should be warm and the topping cold. That contrast is what the whole dish rests on: cold fish on warm rice tastes quite different from both of them straight out of the fridge.

Variation
A vegan bowl follows by itself: swap the fish and prawns for marinated mushrooms, fried tofu, avocado, cucumber and cooked carrot, and leave the omelette out.

Chirashi is assembled just before serving. The sliced fish and vegetables keep in the fridge for up to two hours; the rice stays at room temperature under a damp cloth.

This is the cheapest way to try sushi at home: no mat needed, the nori goes on as a garnish, and not a single piece falls apart, because nobody rolled it.
