Feta and Sun-Dried Tomato Spread

Feta does not have to be crumbled — whipped in a blender it becomes something between cheese and mousse. The oil from the sun-dried tomatoes works here as a carrier rather than a fat: it already holds everything the tomatoes, garlic and herbs have given it. That is why it comes from the jar rather than the bottle.

Makes: about 350 g, 6 portions

Method

  1. Step 1: Drain the feta

    Lift it out of the brine and pat it dry. Extra brine makes the spread loose and too salty.

  2. Step 2: Whip the cheese base

    Blitz the feta with cream cheese, garlic, lemon juice and two spoons of oil for 2 minutes, until airy and smooth. Take your time: the long whipping is what makes it mousse-like.

  3. Step 3: Slice the tomatoes

    Blot them and cut into fine strips. Fold two thirds into the cheese and keep a third for the top.

  4. Step 4: Fold, do not blend

    Stir the tomatoes in with a spatula: blended, they turn the spread uniformly pink instead of white streaked with red.

  5. Step 5: Let it rest

    Add the oregano and pepper, cover and chill 30 minutes. Top with the rest of the tomatoes and a little oil before serving.

Tips & variations

  • Tip

    Feta from brine is creamier than the dry vacuum-packed kind. With dry feta, add a spoon of sour cream or the spread comes out sandy.

  • Tip

    No salt is needed at all: feta and tomatoes bring plenty. Taste before you reach for the salt.

  • Variation

    With roasted peppers instead of tomatoes it is sweeter and bright orange. With olives it is saltier, and better with wine.

  • Storage

    Four days in a closed jar. Let it stand 15 minutes at room temperature before serving — straight from the fridge it is too firm to spread.
