Mushroom Spread

Mushrooms are 90% water, and until it has evaporated they are not frying but stewing. That is why mushroom spread so often turns out pale and wet. Keep them in the pan until they shrink to a third and begin to brown — that is when the roasted, nutty flavour appears.

Makes: about 400 g, 6 portions

Method

  1. Step 1: Get the pan hot

    Mushrooms only go into a properly hot pan with oil. On a lukewarm one they release their juice immediately and stew.

  2. Step 2: Drive off the water

    Fry 12–15 minutes, stirring occasionally. They give up a lot of water first; once it has gone they finally start to brown.

  3. Step 3: Add the onion

    Add it and cook 8 minutes more until soft and golden, with the garlic and thyme for the last minute.

  4. Step 4: Cool it

    Tip everything into a bowl and let it cool 10 minutes. Hot mixtures steam and spit in a blender.

  5. Step 5: Blitz with the walnuts

    Pulse the mushrooms with the toasted nuts and lemon juice, leaving some texture. The nuts supply the richness that butter would give.

  6. Step 6: Let it rest

    Season and chill an hour. Cold, it is firmer and tastes more definite.

Tips & variations

  • Tip

    Do not wash mushrooms under the tap — they absorb it. Wipe them with a damp cloth, or rinse fast and dry at once.

  • Tip

    A handful of dried porcini (15 g) soaked in 100 ml of boiling water and chopped transforms this. Cook the soaking liquid down with the mushrooms.

  • Variation

    A dairy version: 80 g of butter instead of oil and a spoon of sour cream — milder and creamier.

  • Storage

    Four days in the fridge under a film of oil. Freezes in portions for two months — unlike dairy spreads, this one takes freezing well.
