Cabbage Bake
Raw cabbage in a bake stays crunchy, which is precisely what nobody wants from a bake. Twenty minutes in a pan changes everything: it turns soft, sweet and compact. Only then does the egg mixture go in, gluing it all into one dense, pastry-free pie.

Method

Step 1: Stew the cabbage
Heat the oil and cook the onion and carrot for 5 minutes, add the cabbage and stew covered for 20 minutes, until soft and reduced by half.

Step 2: Drive off the moisture
Take the lid off and give it 5 more minutes so the spare liquid goes. Wet cabbage stops the egg mixture setting.

Step 3: Cool to warm
Tip it into a bowl and let it cool 10 minutes. Added to a hot mass, the eggs would scramble.

Step 4: Make the custard
Beat the eggs with sour cream, semolina, salt and pepper and leave 5 minutes: the semolina must swell or it stays gritty in the finished bake.

Step 5: Combine
Fold the custard into the warm cabbage with the dill and half the cheese, spread it in a greased dish and level it.

Step 6: Bake
Scatter over the rest of the cheese and bake 40–45 minutes at 180 °C to a golden top. Rest 15 minutes before cutting.

Tip
The semolina works as a sponge for whatever water the cabbage still gives up in the oven. Breadcrumbs by weight do the same job.

Tip
Winter cabbage is tougher and wants 10 minutes more stewing. Young cabbage needs only 12, or it collapses.

Variation
With 300 g of mince, browned separately and folded in, it becomes a full supper. With mushrooms instead, a meat-free one.

Storage
Three days in the fridge. Good cold, and best reheated in a covered pan rather than a microwave.
