Air Fryer Cheese Sticks
Cheese sticks fail in one place every time: the cheese melts before the coating has set and runs out into the basket. The fix is simple and non-negotiable — double breading and the freezer. A frozen stick has time to form a crust while the middle is only starting to soften. Without that hour in the freezer, do not start: nothing rescues it afterwards.

Method
-
Step 1: Cut the cheese
Cut the mozzarella into batons 1.5 × 1.5 × 7 cm. Use firm block cheese, not balls in brine: those hold far too much water and burst through the coating.
-
Step 2: Set out three bowls
Flour in one, beaten eggs in the second, breadcrumbs mixed with oregano, garlic and salt in the third. Keep one hand for dry and one for wet, or your fingers become breaded dough.
-
Step 3: Bread them twice
Roll a stick in flour, then egg, then crumbs. Then egg again and crumbs again. It is the second coat that holds the cheese in.
-
Step 4: Freeze for an hour
Lay the sticks on a lined board and freeze at least an hour, better overnight. This is not a convenience step but the condition on which the whole thing works.
-
Step 5: Preheat and spray
Heat the air fryer to 200 °C. Spray the frozen sticks with oil on all sides — crumbs without fat stay pale and taste of raw flour.
-
Step 6: Cook 7 minutes
Lay them out in a single layer without touching and cook 6–7 minutes, turning halfway. Take them out the moment the crust turns gold.
-
Step 7: Serve immediately
Rest a minute and serve with tomato sauce. Five minutes on, the cheese inside sets and the stretch is gone.
Tips & variations
-
Tip
If you see cheese starting through the crust, take them out at once and never mind the timer. Another thirty seconds and there is a puddle in the basket.
-
Variation
Add a spoonful of grated parmesan to the crumbs: a saltier crust that browns faster.
-
Tip
Panko gives a noticeably crisper crust than fine crumbs because it is coarser and takes up less fat. If you have the choice, use it.
-
Storage
Breaded raw sticks keep a month in the freezer. This is exactly the dish to make in a big batch and cook as needed.
