Air Fryer Chicken Breast
Breast does not dry out from heat but from time — the muscle gives up water steadily, so the longer it is in there the drier it gets. The air fryer wins on speed alone. But a thermometer is not optional here: the difference between juicy and cottony is five degrees and two minutes. Pull it at 68 °C and it climbs to a safe 74 °C on the plate while it rests.

Method
-
Step 1: Even out the thickness
Cover the fillets with cling film and pound the thick end until the breast is an even depth. An uneven one cooks unevenly: the thin edge dries out while the thick end catches up.
-
Step 2: Dry and season
Pat the fillets dry with kitchen paper — no crust forms on a wet surface. Rub with oil and the paprika, garlic, onion, salt and pepper on both sides.
-
Step 3: Preheat the air fryer
Heat it to 190 °C for 3 minutes. A cold basket is the main cause of pale chicken: the meat gives up its juice before the air is hot enough to brown it.
-
Step 4: Cook the first side
Lay the breasts in a single layer without touching. Cook for 6 minutes; the top takes on a golden crust in that time.
-
Step 5: Flip and finish
Turn them and cook another 4–8 minutes depending on thickness. Start checking with a thermometer in the thickest part from minute six.
-
Step 6: Pull at 68 °C
As soon as the thermometer reads 68 °C, take it out. It looks underdone, but carryover heat takes over from here and finishes the job.
-
Step 7: Rest for 5 minutes
Move to a plate and leave 5 minutes. The temperature climbs to a safe 74 °C and the juices redistribute instead of running out onto the board.
Tips & variations
-
Tip
The thermometer is not a flourish. Judging chicken by eye or by poking is the most reliable way to either dry it out or leave it raw inside.
-
Variation
Brine the fillets 30 minutes in 1 tablespoon of salt per 500 ml of water — noticeably juicier even if you overshoot slightly.
-
Tip
Do not cook more than two at a time. A crowded basket turns an air fryer into a steamer and there will be no crust.
-
Storage
Three days in the fridge. Reheat gently: 3 minutes at 160 °C, or the meat loses everything you were careful about.
