Beet and Feta Canapés

Beetroot is sweet, feta is salty, walnuts are crisp — this canapé lives on contrast rather than technique. Only one thing has to be done properly: dry the beetroot well, or its juice turns bread and cheese pink within ten minutes.

    Goat's cheese or bryndza stand in for feta; toasted pumpkin seeds replace the walnuts for anyone avoiding nuts.

Method

  1. Step 1: Dry the beetroot

    Dice the cooked beetroot small and spread it on kitchen paper for 10 minutes. This step decides whether the platter stays tidy.

  2. Step 2: Toast the rye

    Toast the slices and cool them completely. Rye crumb is dense, and toasted it carries the weight of the topping better than white bread.

  3. Step 3: Dress the beetroot

    Toss the cubes with olive oil, thyme and pepper. No salt is needed: the feta salts both.

  4. Step 4: Cut the bases

    Trim the crusts and cut each slice into four squares — exactly 24 bases.

  5. Step 5: Assemble and drizzle

    Pile beetroot on each square, top with feta and walnuts, and run a thin thread of honey over them just before serving. Honey only shouts when there is a lot of it; here a drop is the point.

Tips & variations

  • Tip

    Boil beetroot whole and unpeeled so it does not bleed its colour and flavour into the water. A medium one takes 40–50 minutes, a large one an hour.

  • Tip

    Use feta from brine rather than a dry "cheese snack" block: real feta crumbles into pieces instead of smearing.

  • Swap

  • Storage

    Dressed beetroot keeps two days in the fridge. Assembled canapés last about two hours before the bread stains.
