Pâté Toasts

Pâté on bread is simple, and it lives or dies on two details. First, the baguette has to be dried to a crunch, because a soft base under a rich spread tastes raw. Second, pâté needs acidity, or by the third toast the whole thing turns heavy.

    A spoon of cranberry sauce, thick plum jam or a few pickled lingonberries all do the same job as the onion jam.

Makes: 24 toasts, 8 portions

Method

  1. Step 1: Toast the baguette

    Lay the slices on a tray, sprinkle with oil and dry them for 8–10 minutes at 190 °C until golden. They should snap, not bend.

  2. Step 2: Rub with garlic

    Rub the warm toasts lightly with the cut clove. Warm bread takes exactly as much garlic as it needs; on cold bread you cannot taste it.

  3. Step 3: Make the onion jam

    Cook the onion in a spoonful of oil for 10 minutes until soft, add the sugar and balsamic and cook 3–4 minutes more, until sticky and dark.

  4. Step 4: Let the pâté warm up

    Cold pâté tears the bread and spreads in lumps. Twenty minutes at room temperature and it goes on smoothly.

  5. Step 5: Assemble

    Spread the pâté generously, add half a teaspoon of onion jam and a thyme leaf. Serve at once, while the toast still crunches.

  • Tip

    The toasts can be dried a day ahead and kept in a paper bag — in plastic they go limp overnight.

  • Tip

    Make at least double the jam: it keeps two weeks in the fridge and rescues any cheese, cold cut or sandwich.

  • Swap

  • Storage

    Assembled toasts last an hour at most. Separately: pâté three days, jam two weeks, toasts one day.
