Ham and Cheese Canapés
The trick here is small but decisive: the slice of ham is pleated, not rolled. A pleated ribbon grips the skewer, keeps its volume and looks generous, while a rolled one quietly unwinds on the platter. Everything else is contrast — salty cheese, sweet cherry tomato, sharp cornichon, all in one bite.

Method
-
Step 1: Cube the cheese
Cut about 24 cubes of 2 cm. That size holds a skewer without crumbling and still goes down in one bite.
-
Step 2: Cut the ham
Cut the slices lengthways into 3 cm ribbons. Very thin ham tears on the skewer, so choose a medium-cut deli slice.
-
Step 3: Pleat each ribbon
Fold every ribbon into three or four pleats. The folds are what give the canapé volume and stop the ham sliding down.
-
Step 4: Prep the rest
Halve the cherry tomatoes and cut the cornichons in half crossways. Blot the tomato cut faces so juice does not run down the skewer.
-
Step 5: Thread them
Bottom to top: tomato half, pleated ham, cheese cube, cornichon half. Snug, but without forcing — the cheese splits.
-
Step 6: Make the dip
Stir the sour cream with the mustard and pepper and put it in a small bowl in the middle of the platter for dipping.
-
Step 7: Chill, then temper
Twenty minutes in the fridge under film, then 15 minutes at room temperature: fridge-cold ham and cheese taste of very little.
Tips & variations
-
Tip
These can be assembled six hours ahead. Cover the platter with film or the cut cheese dries and darkens at the edges.
-
Variation
Swap the cornichon for a pitted olive or a marinated mushroom: less sharp, equally good contrast.
-
Swap
Thinly sliced roast chicken breast works instead of ham — lighter, and considerably less salty.
-
Storage
Up to a day in the fridge under film, though cherry tomatoes weep overnight. Assembling on the day is better.
