Fresh Orange Juice
Fresh orange juice is a one-ingredient recipe in which everything depends on choosing the fruit and on speed. An orange is roughly half juice by weight, and its vitamin C starts breaking down the moment the juice meets air. So it is not made ahead — it is made and drunk.

Method

Step 1: Bring them to room temperature
Take the oranges out of the fridge half an hour ahead. Cold fruit gives noticeably less juice — the flesh is tighter.

Step 2: Roll them
Press down with your palm and roll each orange on the counter for 10 seconds. It breaks the membranes inside and the juice comes out more easily.

Step 3: Squeeze
Cut across the segments and press on a juicer or by hand. Do not press right into the skin: the white pith gives bitterness.

Step 4: Strain if you like
Sieve it for a clear juice, or keep the pulp for more fibre and most of the flavonoids.

Step 5: Serve at once
Pour and drink within 15 minutes. A spoon of lemon juice slows the oxidation a little if it has to wait.

Tip
A juicy orange feels heavier than it looks and has thin, smooth skin. Coarse, pitted skin almost always means thick pith and little juice.

A kilo of oranges yields roughly 400–500 ml. Two full glasses take seven or eight medium fruit — more than most people expect.

Variation
Orange with grapefruit (2:1) is less sweet with a pleasant bitterness; with carrot it becomes thicker and mellower.

Storage
It does not keep. If it must, fill a glass bottle to the brim, close it and refrigerate for no more than 12 hours.
