Mango Pineapple Smoothie
The usual mistake with a homemade smoothie is ice. It dilutes the drink the moment it starts melting, and within two minutes a thick smoothie is sweet water. Frozen fruit does the same cooling job without the loss: the cold is there, the dilution is not.

Method
-
Step 1: Take the fruit out early
Let the frozen cubes sit for 5 minutes. Rock-solid, they strain the blender motor and stay as icy lumps.
-
Step 2: Liquid goes in first
Pour the juice and water into the jug and pile the fruit on top. The blades need to find liquid immediately, or nothing circulates and you end up pushing it down with a spoon.
-
Step 3: Blend smooth
Forty to sixty seconds, until the pineapple fibres disappear. Pineapple is more fibrous than mango, so it sets the time.
-
Step 4: Adjust taste and body
Add the lime juice and honey if needed. Too thick: another 50 ml of water. Too sharp: half a banana, which also makes it creamier.
Tips & variations
-
Tip
A ripe pineapple smells at the base and has springy rather than dry leaves. An unripe one is harshly sour, and no amount of honey fixes it.
-
Tip
Freezing your own fruit is cheaper and better than buying it frozen: cube ripe mango, spread it on a tray in one layer, freeze, then bag it.
-
Swap
Coconut milk instead of orange juice makes it richer and closer to a tropical cocktail.
-
Storage
Drink it straight away: within half an hour it separates. Leftovers can be frozen in moulds as ice lollies.
