Egg and Spring Onion Spread
Mash the eggs with a fork and you get an even paste with no character. The classic method is different: the yolks are worked into a smooth cream and the whites diced and folded in. One spread, both a creamy base and pieces. The spring onion goes in last, or it waters everything down.

Method

Step 1: Hard-boil the eggs
Nine minutes in boiling water, then straight into cold. Nine gives a firm yolk with no grey ring, which is where the sulphurous taste comes from.

Step 2: Separate them
Peel and separate yolks from whites. From here they do different jobs: the yolks become cream, the whites texture.

Step 3: Cream the yolks
Mash them with the soft butter, mayonnaise and mustard into a smooth cream with no lumps.

Step 4: Dice the whites
Cut them into 5 mm cubes and fold them into the yolk cream. Grated whites go stringy; diced is far better.

Step 5: Onion last
Stir in the spring onion, salt and pepper just before chilling. Added earlier it weeps and loosens the spread.

Step 6: Chill
Twenty minutes in the fridge sets the butter, so the spread stays on the bread instead of sliding off.
Tips & variations

Tip
Eggs a few days old peel far more easily than very fresh ones. Peel under cold running water and the shell lifts in strips.

Tip
The butter is not spare: it sets in the cold and holds the spread together. With mayonnaise alone it runs off bread at room temperature.

Variation
With 100 g of grated processed cheese it becomes firmer and saltier. With tinned tuna it is a different dish on the same base.

Storage
Two days in a closed jar — boiled eggs spoil faster than most fillings. Do not freeze.
