Air Fryer Chicken Strips
Cultured milk makes a gentle marinade — its acidity loosens the protein without turning the meat woolly the way vinegar or lemon can. Panko matters more than standard crumbs, because the large flakes build texture that browns. And the coating must be oiled: dry panko stays stubbornly white in an air fryer.

What to use instead
No panko? Blitz stale white bread. Fine shop-bought crumbs give a dense coating rather than a crisp one.

Method
-
Step 1: Marinate
Coat the strips in the buttermilk with the salt, paprika and pepper, and refrigerate for 30 minutes.
-
Step 2: Set up three bowls
Flour in one, beaten egg in the second, panko mixed with garlic powder in the third. A production line beats improvising.
-
Step 3: Bread the strips
Shake off the marinade, dredge in flour, dip in egg, then press firmly into the panko on both sides.
-
Step 4: Oil the coating
Lay the strips out and spray or brush them evenly with oil. This is the only way panko turns golden rather than pale.
-
Step 5: Preheat
Run the air fryer at 200 °C for 3 minutes. For breaded food it genuinely helps — a hot surface sets the crust immediately.
-
Step 6: Cook for 12 minutes
Arrange in a single layer and cook for 12 minutes at 200 °C, turning them at the 6 minute mark.
-
Step 7: Check the meat
The centre should read 74 °C and the juices run clear. Let the strips rest for 2 minutes before serving.
Tips & variations
-
Tip
Browning varies by model, so open the basket 3 minutes before the end the first time and judge by colour.
-
Tip
In the oven these need 20–22 minutes at 210 °C on a rack, and the underside still ends up softer than it does in the basket.
-
Tip
Leave gaps between the strips; wherever they touch, the coating stays white and damp.
-
Swap
No panko? Blitz stale white bread. Fine shop-bought crumbs give a dense coating rather than a crisp one.
-
Storage
Two days in the fridge; reheat 3–4 minutes at 190 °C. A microwave turns the coating to mush.
