Chicken in Sour Cream Sauce
A sour cream sauce breaks for exactly one reason: cold sour cream poured into a boiling pan. It curdles instantly and there is no rescuing it. The fix is simple — drop the heat and loosen the sour cream with warm liquid first. After that the chicken does the work, and twenty minutes in the sauce is all it needs.

Method
-
Step 1: Cut the chicken
Cut the thigh fillets into generous 4 cm pieces — small ones dry out and disappear into the sauce.
-
Step 2: Brown
Heat the oil and fry the chicken over high heat for 6–7 minutes, until golden. Salt it after browning, not before.
-
Step 3: Add the onion
Add the sliced onions and cook for 5 minutes, until translucent and soft.
-
Step 4: Add flour
Sprinkle over the flour, stir and let it cook for a minute — this is what thickens the sauce without lumps.
-
Step 5: Loosen the sour cream
Turn the heat down. Mix the sour cream with the hot water in a separate bowl, then pour it in, stirring constantly.
-
Step 6: Simmer
Add the garlic, salt and pepper and simmer, covered, for 20 minutes. The sauce should barely blip, never boil.
-
Step 7: Check
Cut a piece open: the meat should be white through, and the sauce should coat a spoon.
-
Step 8: Serve
Scatter with dill and serve with mash, pasta or boiled potatoes.
