Cold Drinks

Witch’s Brew Smoothie

The colour of something just ladled from a cauldron, the taste of sweet apple and banana — you barely notice the spinach. No colouring at all: the spinach does the green, and kiwi adds a little tartness. One blender, five minutes, two glasses of potion.

Ingredients

  • What to use instead

Swap half the apple juice for water if you want it less sweet.

Makes: 2 glasses of 300 ml

Method

  1. Step 1: Wash the spinach

Rinse the spinach in cold water and shake it dry. Trim any thick stems — they leave fibres the blender won't break down.

  2. Step 2: Cut the fruit

Peel the kiwi and banana and cut them into large chunks.

  3. Step 3: Spinach first

Put the spinach in the blender with the apple juice. Blend for 20–30 seconds, until the leaves vanish completely — no green flecks in the brew.

  4. Step 4: Add the fruit

Add the kiwi and banana and blend for about a minute more, until completely smooth.

  5. Step 5: Serve

Pour straight away: within half an hour the spinach darkens and the brew loses its glow.

Tips & variations

  • Tip

Use a frozen banana for a thicker, colder potion, almost like soft-serve.

  • Variation

Dip the rim of the glass in syrup and then green sugar for 'slime' dripping down the sides.

  • Swap

Swap half the apple juice for water if you want it less sweet.
