Apple Fritters
The fluffiness comes from bubbles of carbon dioxide that the soda makes in acidic kefir. Long mixing destroys them, so stir the batter for about thirty seconds and fry it at once. Use sharp apples: sweet ones go too soft in the batter and all but disappear.

Method

Step 1: Warm the kefir
The kefir must be at room temperature — straight from the fridge the soda works far less well and the fritters come out flat.

Step 2: Mix the wet ingredients
Whisk the eggs with the sugar and salt, pour in the kefir and mix well.

Step 3: Grate the apples
Peel the apples and grate them coarsely. Squeeze out a little juice or the batter will be too loose.

Step 4: Combine
Add the flour with the soda and cinnamon, then the apples, and stir for barely 30 seconds — lumps are fine.

Step 5: Heat the pan
Heat a pan with oil over medium heat. Too high and the fritters scorch outside while staying raw within.

Step 6: Fry
Drop in spoonfuls of batter and fry 2–3 minutes a side, covered, until golden.

Step 7: Drain
Lift the fritters onto paper towel so the excess oil runs off.

Step 8: Serve
Serve hot with sour cream, honey or simply dusted with icing sugar.

Tip
The batter should be as thick as sour cream: if a spoonful holds its shape, the fritters will be fluffy.

Variation
Add a handful of raisins, or replace half the apples with pear.
