Halushky Dumplings
Halushky are flour, water and exactly ten minutes of patience. The batter stays soft, almost pourable, and goes straight into boiling water from a spoon. Their lightness comes not from soda but from barely mixing: the less you work the dough, the tenderer they are.

Method

Step 1: Mix the batter
Whisk the egg with the water and salt, add the flour and stir with a spoon until even. It should be thick but still drop off the spoon.

Step 2: Boil the water
Bring salted water or broth to the boil in a wide pan, then lower to a medium simmer — halushky dislike a violent boil.

Step 3: Drop them in
Dip a tablespoon into the water, scoop up batter and drop it in small portions. A wet spoon stops the dough sticking.

Step 4: Cook
Simmer for 7–8 minutes after they float. Break one open: no raw dough should remain inside.

Step 5: Fry the onion
While they cook, fry the finely chopped onion in butter until golden.

Step 6: Serve
Lift the halushky out, spoon over the buttery onion and scatter with dill. In broth, serve them straight in the bowl with the soup.

Tip
Do not drop them all in at once — they need room to float or they stick into one lump.

Variation
Cheese halushky: stir 200 g of sieved cottage cheese into the batter and use 50 ml less water.
