This is breakfast you can make while the kettle boils. The only difficulty is the flour: too little and they fall apart, too much and they turn tough. The test is simple — the dough should barely stick to your hands yet hold as a rope.

Method

  1. Step 1: Mash the curd

    Press the cheese through a sieve or mash it smooth with a fork; grains stay noticeable in the finished dumplings.

  2. Step 2: Mix the dough

    Stir in the egg, sugar and salt, add the flour and bring it together quickly. Long kneading makes them tough.

  3. Step 3: Roll into ropes

    Divide into three and roll each piece into a 3 cm rope on a floured worktop.

  4. Step 4: Cut

    Cut diagonally into 2 cm pieces and press each lightly with a fork — the ridges hold the sour cream.

  5. Step 5: Boil

    Drop into salted boiling water in batches. As soon as they float, give them exactly 2 minutes.

  6. Step 6: Serve

    Lift out, pour over melted butter and serve with sour cream or jam.

  • Tip

    Keep the water at a gentle simmer. A rolling boil knocks them against the pan and they break up.

  • Variation

    Add a spoon of cocoa or a handful of raisins to the dough — same recipe, different breakfast.

  • Tip

    Test one before cooking the lot: if it falls apart, work in another spoonful of flour.

  • Storage

    Freeze raw pieces on a board, then bag them. Cook from frozen for 4 minutes.
