Baked Fish with Vegetables

Vegetables and fish cook at different speeds, so they go in one after the other: potatoes first, fish twenty minutes later. That way the vegetables brown and the fillets stay juicy. The lemon goes on at the very end — bake it too long and the peel turns bitter.

Ingredients

Makes: 4 servings

Method

  1. Step 1: Heat the oven

Set the oven to 200 °C and brush a baking tray with a spoonful of the oil.

  2. Step 2: Slice the vegetables

Cut the potatoes into 5 mm rounds, the carrots into thin half-moons and the onions into rings. Thin potatoes have time to brown.

  3. Step 3: Roast the vegetables

Toss them with two tablespoons of oil, salt, pepper and thyme, spread in an even layer and roast for 20 minutes.

  4. Step 4: Prepare the fish

Pat the fillets dry and rub with salt, pepper and the remaining oil. Wet fish steams instead of roasting.

  5. Step 5: Add the fish

Take out the tray, stir the vegetables, lay the fillets on top and return to the oven for 15 minutes.

  6. Step 6: Lemon at the end

Five minutes before the end, lay thin lemon slices over the fish. Any longer and the peel turns bitter.

  7. Step 7: Check and serve

The fish is ready when it is white through and flakes with a fork. Serve straight from the tray.

Tips & variations

  • Tip

Thaw frozen fillets in the fridge and squeeze them dry — the water turns the dish into a stew.

  • Variation

With salmon or trout cut the fish time to 10 minutes; oily fish cooks faster.

  • Tip

For a browned top, switch on the grill element for the last 3 minutes and stay by the oven.

  • Storage

Keeps 2 days in the fridge. Reheat under foil so the fish does not dry out.
