Halloumi is the rare cheese that holds its shape over fire: golden and crisp outside, springy and slightly squeaky within. The only real risk is leaving it on too long, which turns it rubbery. Honey with lemon and mint isn’t decoration — a salty cheese needs something sweet and sharp to push against.

Method

Step 1: Slice the cheese
Cut the halloumi into 1.5 cm slices. Thinner ones dry out and toughen before the stripes even appear.

Step 2: Pat dry
Blot the slices with paper towel: surface moisture stops the cheese browning and makes it stick.

Step 3: Brush with oil
Brush the slices, not the grate — it uses less oil and keeps the smoke down.

Step 4: Grill
Lay them on a well-heated grate and cook 3–4 minutes a side, until dark stripes form.

Step 5: Make the dressing
Stir the honey with lemon juice, zest and pepper into a loose, slightly sharp glaze.

Step 6: Assemble
Pile the hot cheese onto a plate, spoon over the dressing and add the halved cherry tomatoes.

Step 7: Serve at once
Tear the mint over the top and serve immediately: halloumi is good only hot, and firms up within ten minutes.

If the cheese tastes too salty, soak the slices in cold water for 10 minutes and pat them dry.
