Oven Skewers
In winter, or in a flat, there is no room for a grill — but there is still the craving. The oven gives you everything except smoke, so the smoke comes from smoked paprika. One trick matters: a rack instead of a tray, so hot air reaches the meat from every side.

Step 1: Cut and marinate
Cut the pork into 4 cm cubes. Grate two onions to a pulp, mix with the kefir, smoked paprika, pepper and oil, and coat the meat.

Step 2: Let it stand
Refrigerate for 3 hours. Salt 20 minutes before it goes into the oven.

Step 3: Soak the skewers
Soak wooden skewers for 30 minutes. Metal ones are better still — they carry heat into the meat as well.

Step 4: Thread them
Thread 4–5 pieces per skewer with thick rings of the third onion between them. The skewers should sit across the rack.

Step 5: Set up the rack
Heat the oven to 220 °C. Lay the skewers on a rack with a tray of water underneath: it catches the fat and stops it smoking.

Step 6: Roast
Roast for 30 minutes, turning once halfway. Switch on the top grill element for the last 5 minutes — that is what gives the crust.

Step 7: Check and serve
Cut into a piece: the juices should run clear. Rest for 5 minutes under foil and serve with dill and pickled onion.

Tip
Do not lay the skewers straight on a tray — the meat sits in its own juices and comes out braised rather than roasted.

Keeps 2 days. Reheat at 180 °C for 8 minutes; a microwave softens the crust.
