Shrimp Skewers
Shrimp are the fastest thing you can grill: one minute too long and they turn into rubber. So the marinade goes on early, the coals go hot, and you do not walk away. Thirty minutes of marinating is plenty.

Method

Step 1: Prepare the prawns
Thaw them in the fridge, never in warm water, and pat them dry. Wet prawns steam over the coals instead of colouring.

Step 2: Make the marinade
Mix the melted butter, olive oil, crushed garlic, paprika and chilli. Add the juice of one lemon but no salt yet.

Step 3: Marinate briefly
Coat the prawns and leave for 30 minutes at room temperature. Any longer and the lemon juice starts to cure them.

Step 4: Soak the skewers
Soak wooden skewers in water for 20 minutes or they will burn faster than the prawns cook.

Step 5: Thread them
Thread 5–6 prawns per skewer, piercing each twice — near the tail and near the head — so they cannot spin.

Step 6: Grill for six minutes
The coals should be hot. Three minutes a side, no more. A cooked prawn curls into a firm letter C and turns matt pink.

Step 7: Serve at once
Salt them once they are off the fire, scatter with parsley and serve with lemon halves charred cut-side down.
Tips & variations

Tip
A prawn curled into a tight O is already overcooked. Aim for a C.

Variation
A grill basket works just as well — smaller prawns cannot slip through.
