Ginger and Honey Tea
The heat of ginger lives in gingerol, and it leaves the root slowly — a two-minute steep gives you barely a hint of it. So the ginger is simmered properly, and the honey and lemon go in at the end, once the pan has cooled a little.

What to use instead
Maple syrup works instead of honey, as does dried persimmon simmered with the ginger. Sugar works too, but the drink becomes plainer at once.

Method
-
Step 1: Slice the ginger
There is no need to peel it, a good scrub is enough. Cut thin slices across the fibres: the more cut surface, the faster the flavour travels.
-
Step 2: Simmer for 10 minutes
Cover the ginger with the water, bring to the boil and simmer with the lid on. The lid matters — without it half the aroma leaves with the steam.
-
Step 3: Add turmeric and pepper
Stir in the turmeric and a pinch of black pepper at the end of the simmer. The pepper is not for heat: it markedly improves the uptake of curcumin.
-
Step 4: Let it cool a little
Take the pan off the heat and wait 5 minutes. The brew should be hot but already sippable — about 50–55 °C.
-
Step 5: Stir in the honey
Only now add the honey. In boiling water it loses its scent and turns into flat sweetness; in a warm brew it keeps every floral note.
-
Step 6: Finish with lemon
Squeeze in the juice of half the lemon, slice the other half into rounds and drop them into the mugs. Strain and serve.
Tips & variations
-
Tip
For more bite, do not add more ginger — simmer it for 15 minutes instead. The flavour gets deeper rather than merely sharper.
-
Swap
Maple syrup works instead of honey, as does dried persimmon simmered with the ginger. Sugar works too, but the drink becomes plainer at once.
-
Variation
Add a cinnamon stick and 3 cardamom pods to the simmer and you land somewhere between tea and a spiced honey punch.
-
Storage
The plain ginger brew keeps 3 days in the fridge. Reheat a cup, let it stand a minute, then add the honey.
