Hot Cocoa

Cocoa powder does not dissolve in milk, it hangs in it. Every particle is coated in cocoa butter, water pushes it away, and powder tipped into hot liquid clumps on contact. So it starts as a paste made with a few spoons of milk, and everything else follows.

  • What to use instead

    Dutch-process cocoa (the darker one) is rounder and softer; natural cocoa is paler, brighter and slightly fruity. Both work, natural just wants a touch more sugar.

Makes: 500 ml, 2 mugs

Method

  1. Step 1: Mix the dry things

    Combine cocoa, sugar and salt in a heavy saucepan. The sugar crystals hold the cocoa particles apart, which is already half the battle against lumps.

  2. Step 2: Work it into a paste

    Add 3–4 tbsp of cold milk and rub it with a spoon into a smooth, glossy paste with no dry specks. It takes thirty seconds and decides everything.

  3. Step 3: Add the rest of the milk

    Pour in the remaining milk in a thin stream, whisking constantly, until the mixture is completely even.

  4. Step 4: Heat it through

    Keep it over medium heat for 3–4 minutes, stirring, until it steams. Cocoa powder only opens up with heat; unheated cocoa always tastes raw and faintly floury.

  5. Step 5: Stop before the boil

    The moment steam gathers on the surface, take it off. Boiled milk forms a skin of coagulated protein that trails after the spoon.

  6. Step 6: Whisk and pour

    Add the vanilla sugar and whisk hard in the pan for 15 seconds to raise a fine foam. Pour into warmed mugs and dust with a little cocoa.

Tips & variations

  • Tip

    The pinch of salt is not there to be tasted: it mutes the bitterness of cocoa and makes the chocolate flavour read louder.

  • Swap

  • Variation

    A pinch of cinnamon, a scrape of chilli or a spoon of orange zest changes the drink completely. Add them to the dry mix.

  • Storage

    Mix the cocoa, sugar and salt for six servings into a jar. On a cold morning only the paste and the milk are left to do.
