Pumpkin Spice Latte
The coffee-shop version usually runs on syrup, with as much pumpkin in it as the label requires. The home version actually uses purée, and what it contributes is less flavour than body: the milk turns velvety. Warm the purée with the spices before the milk goes in, or the drink tastes of raw pumpkin.

What to use instead
Oat milk performs as well as dairy here: thick and it foams. Almond milk is too thin for this drink.

Method
-
Step 1: Warm the purée with the spices
In a small pan, warm the purée with the sugar, cinnamon, ginger and nutmeg for 2 minutes, stirring. It darkens and starts to smell — that is the spices opening up in the heat.
-
Step 2: Add the milk
Pour in the milk and heat over medium until steaming, without boiling. Boiled milk forms a skin and leaves the drink lumpy.
-
Step 3: Blend
Off the heat, add the vanilla and blend with a stick blender or whisk for 30 seconds. The purée should disappear completely and foam should form on top.
-
Step 4: Make the coffee
Pull two shots of espresso. Without a machine, 120 ml of very strong brewed coffee does the job — then use 60 ml less milk.
-
Step 5: Combine
Divide the espresso between the glasses and pour in the hot pumpkin milk, holding the foam back with a spoon, then spoon it over the top.
-
Step 6: Serve
Add whipped cream and dust with cinnamon. Drink straight away: after five minutes the purée starts settling.
Tips & variations
-
Tip
If you can feel grains, strain the mixture before pouring. Homemade purée can be fibrous, and it shows in a drink.
-
Variation
For an iced version, chill the mixture and blend it with ice. It needs a little more sugar — cold mutes sweetness.

Storage
The pumpkin base, without coffee, keeps 3 days in the fridge — just warm it a portion at a time.
