Graveyard Dirt Cups

The American Halloween classic, except we make the pudding ourselves with real chocolate instead of a packet, and you taste it from the first spoonful. Chocolate cookies crumble into soil, small biscuits become gravestones and gummy worms crawl out. Six minutes at the stove; the fridge does the rest.

Ingredients

Pudding

  • What to use instead

Any dark chocolate cookie works for the soil; no need to scrape out the filling.

Soil and gravestones

Makes: 8 cups

Method

  1. Step 1: Cook the pudding

Whisk the sugar and cornstarch in a saucepan, then whisk in the milk, salt and vanilla until smooth. Cook over medium-high heat, whisking constantly, until it simmers and thickens — about 6 minutes.

  2. Step 2: Melt in the chocolate

Take off the heat, add the chopped chocolate and butter and whisk until melted and glossy.

  3. Step 3: Chill

Press cling film onto the surface so no skin forms and refrigerate for about an hour, until cold.

  4. Step 4: Fold in cream

With a mixer, whip the cold cream to soft peaks and fold it into the cold pudding in a few additions. Fold in half a cup of the cookie crumbs.

  5. Step 5: Make gravestones

Melt the chocolate, spoon it into a piping bag with a fine tip and write 'RIP' on each oval biscuit. Chill to set.

  6. Step 6: Build the graveyard

Layer crumbs, pudding, more crumbs and pudding in the glasses and finish with a generous layer of soil. Push in a gravestone and add worms crawling out of the dirt.

Tips & variations

  • Tip

Pudding thickens as it cools; if it looks thin while hot, don't keep boiling — overcooked cornstarch thins out again.

  • Swap

Any dark chocolate cookie works for the soil; no need to scrape out the filling.

  • Storage

Assembled cups keep a day in the fridge, but add the top layer of crumbs just before serving so it stays crunchy.
