Braised Potatoes with Meat
This dish comes down to one ratio: the liquid should barely cover the potatoes, no more. Drown them and you get soup rather than a braise. And the meat needs its own half hour first — put the potatoes in at the start and they collapse long before the pork is tender.

Method

Step 1: Brown the meat
Cut the pork into 3 cm cubes, pat dry and brown in hot oil over high heat for 8 minutes. Work in batches so the meat sears instead of stewing.

Step 2: Add the vegetables
Add the chopped onion and carrot and fry together for 6 minutes, until soft.

Step 3: Add tomato paste
Stir in the tomato paste and cook for a minute — it loses its raw edge and gives the gravy colour.

Step 4: Braise the meat
Pour in half the hot water, add the bay leaves, cover and simmer gently for 30 minutes.

Step 5: Add the potatoes
Cut the potatoes into large chunks and add them. Top up with water so it barely covers them.

Step 6: Finish cooking
Braise, covered, for another 25 minutes. Don't stir often — the potatoes break up and the gravy turns to mush.

Step 7: Season
Add the salt, pepper and crushed garlic, then take the pot off the heat.

Step 8: Let it stand
Leave covered for 10 minutes, scatter with dill and serve straight from the pot.

Tip
For a thicker gravy, mash a couple of potato pieces into the pot — the starch does the rest.

Variation
Replace half the meat with mushrooms for a lighter but equally savoury pot.

Chicken works too; cut the first braise to 15 minutes.

Better the next day. Keeps 3 days and reheats gently.
