Pizza and Focaccia

Pizza Capricciosa

Capricciosa means capricious, and this pizza carries a little of everything: tender ham, mushrooms, marinated artichokes and olives. So that no single topping steals the show, we slice everything thin and lay it out in sections or all mixed together, whichever you prefer. Tossing the mushrooms in oil first means they brown instead of drying out.

Ingredients

For the dough

For the topping

  • What to use instead

Oyster mushrooms work in place of button mushrooms, and prosciutto cotto in place of the cooked ham.

Makes: 2 pizzas (30 cm), 4 portions

Method

Oven

275 °C · top and bottom heat, no fan

With a fan: 255 °C

  1. Step 1: Knead the dough

Combine the flour, yeast and salt, add the warm water and oil and knead for 8–10 minutes into a smooth, springy dough.

  2. Step 2: Rise and ball

Cover and leave in a warm spot for 1.5 hours, until doubled. Divide into 2 balls, cover and rest for another 45 minutes.

  3. Step 3: Heat the oven

While the dough rests, put a pizza stone or upturned heavy baking sheet in the upper third of the oven and heat to its maximum, 250–275 °C (480–525 °F), for at least 45 minutes.

  4. Step 4: Prep the toppings

Season the crushed tomatoes with the salt. Toss the mushrooms with 1 tablespoon of the oil so every slice is coated. Pat the artichokes and mozzarella thoroughly dry with paper towels.

  5. Step 5: Stretch the base

Press a ball out from the centre with your fingertips, leaving a 1.5 cm rim, then stretch it over your knuckles to 30 cm. Move it onto a floured peel or parchment.

  6. Step 6: Top the pizza

Spread half the sauce thinly, add half the mozzarella, then the ham, mushrooms, artichokes and olives. Keep the layer thin rather than piled high so it bakes evenly.

  7. Step 7: Bake

Bake for 9–11 minutes, until the rim is golden with charred spots, the cheese has melted and the mushrooms are browned. Bake the second pizza the same way.

  8. Step 8: Serve

Drizzle the hot pizza with the remaining oil and slice.

Tips & variations

  • Tip

Always pat jarred artichokes dry. Dripping marinade makes the base soggy.

  • Variation

Some pizzerias add halved boiled egg or a few anchovies to capricciosa. Try it if you like them.

  • Swap

Oyster mushrooms work in place of button mushrooms, and prosciutto cotto in place of the cooked ham.

  • Storage

Refrigerate leftovers for up to 2 days and reheat in a dry covered frying pan for 4–5 minutes.
