Apple Cinnamon Oatmeal
No sugar is needed here as long as the apple does two jobs. Grated apple dissolves into the porridge and gives up all its sweetness; sliced apple fries in butter until the edges caramelise and stays a distinct layer on top. Cinnamon goes in at the end, because long heat turns it bitter.

Method
-
Step 1: Start the porridge
Put the oats in a pan with the cold milk, water and salt, and bring to the boil over medium heat.
-
Step 2: Grate the first apple
Coarsely grate one apple, skin and all, straight into the pan. It disappears within 10 minutes and does the job sugar would have done.
-
Step 3: Cook for 12 minutes
Keep the heat low and stir every couple of minutes. The porridge slowly takes on a deeper cream colour — that is the apple juice at work.
-
Step 4: Caramelise the second
Cut the other apple into wedges. Melt the butter in a frying pan and cook them over medium-high heat for 4–5 minutes, leaving them alone between turns so the edges go golden.
-
Step 5: Add the cinnamon off the heat
Pull the pan off the heat and dust the apples with cinnamon: hot butter opens it up in seconds, while frying it any longer only makes it bitter.
-
Step 6: Build the bowls
Rest the porridge covered for 5 minutes, then divide it between bowls, spoon the caramelised apples and their buttery juices on top and scatter over the walnuts.
Tips & variations
-
Tip
Use a sharp apple such as Bramley or Granny Smith; sweet varieties go flat in porridge and the flavour vanishes.
-
Variation
The same method is excellent with pears in autumn — just fry them a minute less, as they are softer.
-
Swap
Plant milk works throughout, and coconut oil in place of butter caramelises the apples even faster.
-
Storage
Keep porridge and apples separate for up to 2 days, or the apples go soggy and lose their caramelised edges.
