Pumpkin for an Unwanted Suitor

In old Ukraine, when an unwanted young man came to propose, the girl brought out a pumpkin — and everyone understood the answer without a word. We think pumpkin deserves a better reputation: roasted in wedges with honey it turns sweet and tender with caramelised edges. Too good to give away to anyone you don't like.

Ingredients

Method

Oven

200 °C · top and bottom heat, no fan

With a fan: 180 °C

  1. Step 1: Heat the oven

Heat the oven to 200 °C (400 °F) and line a tray with parchment.

  2. Step 2: Cut the pumpkin

Scoop out the seeds and cut the pumpkin into wedges 2–3 cm thick. Leave the skin on: it holds the shape, and the flesh lifts off easily with a fork.

  3. Step 3: Season

Lay the wedges on the tray in one layer, sprinkle with sugar and drizzle with honey.

  4. Step 4: Add aroma

Tuck a few rosemary sprigs between the wedges, or dust with cinnamon.

  5. Step 5: Roast

Roast for 40 minutes, until soft with dark amber, caramelised edges. Serve warm, spooning over the honey juices from the tray.

Tips & variations

  • Tip

Don't overlap the wedges: crowded pumpkin steams in its own juice and never caramelises.

  • Variation

Scatter toasted walnuts over before serving for crunch.

  • Storage

Leftovers keep 3 days in the fridge; cold, it is good in salads or porridge.
