Meatball Soup
Two questions always come up with this soup: why the meatballs fall apart and why the broth goes cloudy. Both have the same answer — too much heat. Drop the meatballs into barely trembling water rather than a rolling boil and they keep their shape while the broth stays clear.

Step 1: Mix the mince
Combine the mince with the finely chopped onion, egg, semolina, salt and pepper. Knead for a full minute — that is what makes the mixture smooth and sticky.

Step 2: Let it rest
Leave the mince for 10 minutes: the semolina swells and binds it, so the balls hold in water.

Step 3: Shape the meatballs
With wet hands roll walnut-sized balls and set them on a board.

Step 4: Start the vegetables
Bring the water to a boil, add the diced potato and cook for 7 minutes.

Step 5: Fry the base
Fry the onion and carrot in the oil for 6 minutes, until soft and golden.

Step 6: Add the meatballs
Lower the heat until the water only trembles and drop the balls in one by one. Don't stir for the first 3 minutes — let them set.

Step 7: Finish
Add the fried vegetables and the pasta and cook for 8 minutes more, skimming off any foam. Season at the end.

Step 8: Serve
Take off the heat, add the dill and let the soup stand, covered, for 5 minutes.

Tip
Semolina instead of bread means no heaviness and no bready taste, and it binds even better.

Rice instead of pasta makes a more filling soup; add it at the same time as the potato.

Turkey meatballs are the most delicate, pork ones the juiciest.

Pasta goes soggy overnight, so cook it separately if you plan to keep the soup for 2 days.
