Cheese and Tomato Toastie

A toastie is something you could make with your eyes shut, but a few small details make it far better. We butter the bread rather than the pan for an even, golden crust. The tomato gets patted dry and the cheese goes on both sides of it, gluing everything together and keeping the bread from going soggy.

Ingredients

  • What to use instead

Swap the butter for a thin layer of mayonnaise on the outside for an even crisper, more uniform crust.

Makes: 2 toasties

Method

  1. Step 1: Dry the tomato

Slice the tomato 5 mm thick, lay the slices on kitchen paper and blot the tops — excess juice makes a soggy toastie.

  2. Step 2: Butter the bread

Butter each slice of bread on one side and turn them butter side down. Spread two of the slices thinly with mustard.

  3. Step 3: Assemble

Top the mustard slices with half the cheese, then the tomato, a sprinkle of oregano and pepper, and the rest of the cheese. Close with the remaining slices, butter side out.

  4. Step 4: Toast the first side

Put the sandwiches in a dry frying pan over medium-low heat, press lightly with a spatula and cover with a lid. Cook for 3–4 minutes until deep golden underneath and the cheese starts to melt.

  5. Step 5: Flip

Carefully flip and cook uncovered for 2–3 minutes more until the second side is golden and the cheese is fully melted and oozing at the edges.

  6. Step 6: Serve

Let them sit for a minute so the cheese sets slightly, then cut diagonally. Eat hot.

Tips & variations

  • Tip

Moderate heat is the key: on high, the bread burns before the cheese melts.

  • Swap

Swap the butter for a thin layer of mayonnaise on the outside for an even crisper, more uniform crust.

  • Variation

Tuck a few basil leaves or thin rings of red onion in with the tomato.
