Naturally Dyed Easter Eggs
The simplest natural dyes work in the very water the eggs boil in, so colouring costs no extra time at all. Onion skins give deep amber, turmeric a warm yellow. The one rule is to start from cold water: the dye is drawn out while the pan comes up to the boil.

Step 1: Use two small pans
Put the onion skins and 4 eggs in one small pan, the turmeric and the rest of the eggs in another. Add 600 ml of cold water to each. Two small pans reach the boil faster than one large one.

Step 2: Add vinegar and salt
Half a spoon of vinegar in each pan lightly etches the shell so the dye takes evenly and goes deeper. The salt helps the white set fast if an egg happens to crack.

Step 3: Heat with the lid on
A lid brings the water up noticeably quicker and strengthens the dye bath meanwhile. The cold start gives the colour a head start and spares the eggs a thermal shock.

Step 4: Boil for 10 minutes
Once boiling, lower the heat and cook for exactly 10 minutes. That gives a firm yolk; by 13 or 14 minutes a grey-green ring forms around it.

Step 5: Chill in cold water
Lift the eggs into cold water for a minute. The shells peel more easily later and the colour sets instead of rubbing off on a napkin.

Step 6: Rub with oil
Dry each egg and wipe it with a cloth and a drop of oil. The dull shell turns glossy and the colour reads a shade deeper.

Tip
White eggs give clean colour, brown ones a muted, darker version. On brown shells turmeric barely shows at all.

Variation
For a denser, almost red tone, leave the cooked eggs in the onion bath for another hour. That no longer fits into 15 minutes, but the colour is worth it.
