Salmon Canapés
A canapé stands or falls on its bread. Dense rye doesn’t go soggy under soft cheese or break under the fish the way a white loaf does. The second trick is not to lay the salmon flat but to roll it into a loose rose — the bite gets height, and it is far easier to pick up.

Method
-
Step 1: Prepare the bread
Trim the crusts and cut each slice into two squares. If the bread is very fresh, dry it in the toaster for a minute so the canapé holds better.
-
Step 2: Season the cheese
Mix the cream cheese with chopped dill, lemon juice and pepper. No salt is needed — the fish brings plenty.
-
Step 3: Spread
Spread each square with about 5 mm of cheese; it is what holds the whole thing together.
-
Step 4: Slice the cucumber
Cut the cucumber into thin rounds, or ribbons with a peeler, and lay one on each square.
-
Step 5: Roll the salmon
Roll each slice of salmon into a loose rose and set it on the cucumber.
-
Step 6: Finish
Top with a sprig of dill and serve, or keep covered in the fridge for no more than an hour.
Tips & variations
-
Tip
Cut the bread just before assembling: trimmed squares dry out at the edges quickly.
-
Variation
A thin slice of avocado or a few capers work well instead of cucumber.
