Scrambled Eggs with Smoked Salmon

Good scrambled eggs are big, soft, creamy folds rather than dry little crumbs, and the only way there is low heat. A spoonful of soured cream at the end stops the cooking and makes them extra silky. The smoked salmon isn’t cooked at all — it simply drapes over the top in ribbons.

Method

  1. Step 1: Get everything ready

Toast the bread in a toaster or dry pan for 2–3 minutes. Chop the chives and tear the salmon into wide strips.

  2. Step 2: Beat the eggs

Beat the eggs with a pinch of salt using a fork, just until the whites and yolks are blended — no froth needed. Go light on salt; the salmon is salty.

  3. Step 3: Start low

Melt the butter in a non-stick frying pan over medium-low heat until foaming but not browning. Pour in the eggs and leave them alone for 20 seconds.

  4. Step 4: Make soft curds

Slowly push the eggs from the edges to the centre with a spatula, gathering them into large soft folds. After 3–4 minutes, while they’re almost set but still glossy, take the pan off the heat — the residual heat finishes them.

  5. Step 5: Stir in the cream

Fold in the soured cream and half the chives — the cream cools the eggs so they don’t overcook.

  6. Step 6: Serve

Pile the eggs onto the toast and top with the salmon ribbons, the rest of the chives and a grind of black pepper. Serve immediately.

Tips & variations

  • Tip

If you need the eggs fully cooked — for young children or during pregnancy, for example — keep them on the heat for 1–2 minutes longer until the curds are firm and matt.

  • Swap

Swap the rye for wholemeal toast or a split English muffin.

  • Variation

Stir a little grated lemon zest or some chopped dill into the soured cream — both are lovely with salmon.
