Devil’s Horns Cheese Rolls
In Ukrainian folk tales the devil always turns up at an evening party — as a guest, or tapping at the window. We gave him horns: soft yeast dough with a salty cottage cheese and dill filling, the kind every Ukrainian knows from hand pies. Twist each one a little crooked so no two match — it is creepier that way.

-
Step 1: Wake the yeast
Dissolve the yeast and sugar in the warm water and leave for 10 minutes, until foamy.
-
Step 2: Make the dough
Beat the egg with the salt and oil, pour in the yeast mixture and add the sifted flour. Knead to a soft, elastic dough.
-
Step 3: Let it rise
Cover with a towel and leave somewhere warm for an hour, until clearly risen.
-
Step 4: Mix the filling
Mash the cottage cheese with the egg, dill and salt. Keep it thick so it doesn't run.
-
Step 5: Shape the horns
Divide the dough into 16 and roll each into a long triangle. Put a spoonful of filling on the wide end, roll up towards the point, then bend each roll into a curve.
-
Step 6: Rest
Set the horns seam-side down on parchment and leave for 15 minutes. Heat the oven to 180 °C (350 °F).
-
Step 7: Bake
Bake until golden-brown, about 20 minutes — go by the colour.
Tips & variations
-
Tip
Brush with beaten yolk before baking for a glossy, properly devilish shine.
-
Variation
Swap half the cottage cheese for crumbled brynza (sheep's cheese) for a saltier, sharper filling.
-
Storage
They keep 2 days in a bag; warm for 5 minutes in the oven before serving.
