Cheese and Grape Canapés
With three ingredients, temperature and size decide everything. Cheese straight from the fridge tastes of almost nothing; twenty minutes in a warm room and it turns nutty and fragrant again. A 2 cm cube with one grape is exactly one mouthful, and the honey goes on just before serving — any earlier and it runs off, leaving the cheese sticky.

No grapes? Use fig halves or pear chunks brushed with lemon juice so they do not brown.

Method

Step 1: Toast the walnuts
Three minutes in a dry pan, shaking often, until they colour and smell nutty. Untoasted, their crunch disappears next to the cheese.

Step 2: Cube the cheese
Cut 2 cm cubes. Smaller ones vanish on the skewer, bigger ones have to be bitten — and a canapé should go in whole.

Step 3: Dry the grapes
Wash the grapes and dry them thoroughly on kitchen paper. Wet grapes slip on the skewer and water down the honey.

Step 4: Thread the skewers
Bottom to top: grape, cheese cube, walnut half. The nut goes on last because it is lightest and will not split the cheese.

Step 5: Let the cheese warm up
Take the assembled skewers out of the fridge 20 minutes before serving. Cold cheese feels rubbery; at room temperature it tastes like cheese again.

Step 6: Finish with honey
Just before serving, drizzle thinly with honey and scatter over thyme leaves and a good grind of black pepper.

Tip
Assemble up to four hours ahead and cover with a damp cloth in the fridge, or the cut faces of the cheese dry out and go waxy.

Variation
Aged cheddar or a blue cheese instead of gouda: with grapes and honey both are considerably louder, in a good way.
