Cranberry Mors
What separates mors from compote is the method: the berries are never boiled whole. The juice is pressed out cold and set aside, the spent pulp alone is simmered to extract colour and the last of the flavour, and the raw juice goes back in off the heat. Vitamin C and fresh aroma both survive.

If you prefer honey to sugar, stir it into the cooled mors; hot liquid strips its aroma.

Method

Step 1: Crush the berries
Let frozen cranberries sit for 20 minutes at room temperature. Crush them with a muddler or pulse them briefly in a blender — coarse mash, not purée.

Step 2: Press out the juice
Tip the mash into muslin and squeeze the juice into a bowl. Cover it and set it aside; this juice never goes near the pan.

Step 3: Simmer the pulp
Cover the spent pulp with the water, bring to the boil and simmer for 5 minutes. This is where the colour and depth come from, which raw juice alone cannot give.

Step 4: Strain and sweeten
Strain the liquid through a sieve, add the sugar and stir until it dissolves while everything is still hot.

Step 5: Add the raw juice
Let the strained liquid cool for twenty minutes, then stir in the reserved juice. Poured into boiling liquid it would lose both its freshness and its vitamin C.

Step 6: Chill and serve
Pour into a jug and refrigerate for at least 2 hours. Serve over ice with mint and a few whole berries in the glass.

Tip
Add the sugar gradually: cranberries are fiercely sour and how much you need depends more on the fruit than on the recipe.

Variation
Lingonberry mors is made exactly the same way but needs less sugar, its acidity being softer.

Three days in a covered jug in the fridge. Sediment at the bottom is normal — just swirl it before pouring.
