Green Smoothie
Two things ruin a green smoothie: visible flecks of leaf and a grassy aftertaste. Order fixes both. Spinach blended with the liquid alone disappears completely, and the banana and apple added second cover the green note with sweetness. Lemon keeps the colour bright.

Method

Step 1: Blend the greens alone
Put the spinach in the blender with the water and run it for 40 seconds, until the liquid is an even green with no shreds of leaf left.

Step 2: Hold it up to the light
Lift the jug towards the window: if you can see specks, give it another 20 seconds. Those specks are what you later taste as grass.

Step 3: Add the fruit
Add the frozen banana, the apple in chunks and the ginger. Leave the apple skin on — most of the aroma lives there and the blender handles it.

Step 4: Blend again
Run it for another 40 seconds until completely smooth. The frozen banana supplies the thickness, so no ice is needed here at all.

Step 5: Stir in chia and lemon
Add the lemon juice and chia with a spoon rather than the blender. The acid stops the colour dulling and the seeds stay whole and faintly crunchy.

Step 6: Drink it fresh
Pour into glasses and drink within 15 minutes. After that the chia start swelling and the smoothie thickens noticeably.

Tip
Spinach is gentler than kale. If you use kale, strip out the tough stems and blend for twice as long.

Variation
Half an avocado instead of chia makes it creamy and much more filling, but add another 50 ml of water.
