Witch Cookies with Poppy Seed Sauce
In Ukrainian villages people scattered poppy seeds on the threshold and around the house to stop a witch coming in: she could not cross until she had counted every seed. So poppy seed cookies are the best charm for a spooky evening. We cut them into moons and pointed hats and dip them in a thick sauce of poppy seeds, milk and honey.

Method
Oven
185 °C · top and bottom heat, no fan
With a fan: 165 °C
-
Step 1: Heat the oven
Heat the oven to 185 °C (365 °F) and tear off two sheets of parchment — the dough is rolled between them, with no extra flour.
-
Step 2: Mix the dry
Mix the flour, baking powder, salt, caraway, poppy seeds and sugar.
-
Step 3: Rub in the butter
Add the cold butter in cubes and rub it in with your fingertips until the mixture looks like breadcrumbs.
-
Step 4: Make the dough
Add the egg and sour cream and knead to a firm dough, with a little more flour if it sticks.
-
Step 5: Cut witchy shapes
Roll the dough between two sheets of parchment to 3 mm. Cut out crescent moons and pointed hats with a knife or cutters and prick them with a fork.
-
Step 6: Bake
Bake for about 15 minutes, until golden. They crisp up on a rack.
-
Step 7: Simmer the sauce
Simmer the poppy seeds, milk, cinnamon and honey over low heat for 5–10 minutes, until thick. Serve the cookies with the hot sauce for dipping.
Tips & variations
-
Tip
Grind the poppy seeds in a spice grinder before simmering: the sauce turns thick and dark, like a witch's brew.
-
Variation
Traditionally the baked sheet is broken into pieces and soaked in the sauce in a bowl — that is shulyky, eaten in August for the Makoviy feast.
-
Storage
The cookies keep a week in a jar; make the sauce just before serving.
