Beer Batter
Ordinary water batter goes soggy while you carry the plate to the table. Three things work here: the bubbles in beer aerate the coating, rice flour does not take up moisture the way wheat flour does, and icy cold slows the gluten down. The one rule is not to mix it smooth — lumps in batter are useful, because they are what gives the uneven, crunchy surface.

What to use instead
Very cold sparkling water works in place of beer at the same quantity. The flavour is plainer, the crunch identical.

Method
-
Step 1: Chill everything
Put the beer in the freezer for 15 minutes and the bowl in the fridge. The colder the batter, the crisper the crust: the gap between batter and oil is doing the work.
-
Step 2: Mix the dry
Combine both flours, the baking powder and the salt. The rice flour is not a flourish — it is what stops the coating softening in the first minutes.
-
Step 3: Pour in the beer
Tip the cold beer in all at once and whisk for about ten seconds. Lumps remain; leave them. The consistency should be like pouring cream.
-
Step 4: Heat the oil
Pour 4 cm of oil into a pan and heat to 190 °C. With no thermometer, test with a drop of batter: it should surface and sizzle at once.
-
Step 5: Coat and fry
Pat the fish dry with kitchen paper and dust it in plain flour — batter will not cling to a wet surface. Dip, let the excess drip off and lower it into the oil.
-
Step 6: Fry in batches
Fry 3–4 minutes to golden, no more than three pieces at a time. Every extra piece drops the oil temperature, and then the batter drinks fat instead of setting.
-
Step 7: Drain on a rack
Lift onto a rack, not kitchen paper: on paper the steam underneath softens the crust within a minute. Salt it straight away, while hot.
Tips & variations
-
Tip
Mix the batter right before frying. Twenty minutes on and the bubbles are gone, the baking powder has fired for nothing, and the crust comes out dense.
-
Swap
Very cold sparkling water works in place of beer at the same quantity. The flavour is plainer, the crunch identical.
-
Variation
Add half a teaspoon of smoked paprika to the batter for vegetables; onion rings and cauliflower are much better for it.
-
Storage
Battered food is not kept — half an hour and the point of it is gone. If some is left, reheat on a rack at 200 °C for 6 minutes.
