Doughs and Basics

Chebureki Dough

The sign of a good cheburek is the big translucent blisters across its crust. Vodka makes them: the alcohol evaporates in hot oil faster than water and lifts the dough from inside. The second trick is near-boiling water, which cooks part of the gluten so the sheet rolls thin without springing back. No alcohol survives the frying, so children eat these too.

Ingredients

  • What to use instead

It works without vodka too — the crust just comes out smooth, with none of the signature bubbles. Replace it with the same amount of water.

Makes: About 850 g of dough, 10 chebureki

Method

  1. Step 1: Mix the dry

Sift the flour and salt into a large bowl. Use a bowl rather than the worktop: hot water is going in next, and a heap on the table simply runs away.

  2. Step 2: Scald it

Pour in the hot water all at once and stir quickly with a spoon to large lumps. Keep your hands out for now — it is hot. Leave 5 minutes to cool.

  3. Step 3: Add oil and vodka

Pour in the oil and vodka and start working it by hand. The dough turns even, soft and faintly greasy to the touch very quickly.

  4. Step 4: Knead

Knead for 8 minutes until smooth. It should stay soft — firmer than varenyky dough but not stiff — and should not stick to your hands.

  5. Step 5: Rest it

Wrap and leave an hour at room temperature. Without that the dough pulls back every time you lift the pin.

  6. Step 6: Roll it thin

Divide into 10. Roll each into an 18–20 cm round, 1–2 mm thick. Use as little dusting flour as you can: the excess burns in the oil.

  7. Step 7: Fry in deep oil

Fill, seal the edge and press it with a fork. Fry in 1 cm of hot oil for 3–4 minutes a side, until golden and blistered.

Tips & variations

  • Tip

Blisters only appear in properly hot oil. Drop in a scrap of dough: it should rise and sizzle at once rather than sink.

  • Swap

It works without vodka too — the crust just comes out smooth, with none of the signature bubbles. Replace it with the same amount of water.

  • Tip

Seal the edge thoroughly: juice escaping into the oil means both spitting fat and a cheburek that has burst open.

  • Storage

The dough keeps a day wrapped in the fridge. Shaped chebureki freeze raw and go straight into the oil, a minute longer each side.
