Dumplings

Cherry Vareniky

The trouble with cherry vareniky is juice bursting out in the pan. The fix is simple: let the cherries stand with sugar, drain them and thicken the filling with a spoonful of starch. Keep the drained juice — it makes the best sauce for the finished dumplings.

Ingredients

Dough

Filling

Makes: about 50 vareniky

Method

  1. Step 1: Make the dough

Scald the sifted flour and salt with hot water, add the oil and knead until smooth. Cover and rest for 30 minutes.

  2. Step 2: Sugar the cherries

Toss the pitted cherries with the sugar and leave for 20 minutes. They release a lot of juice — which is exactly what we want out of the way.

  3. Step 3: Drain them

Tip into a sieve, saving the juice in a cup, and pat the cherries dry with kitchen paper.

  4. Step 4: Thicken the filling

Dust the cherries with the starch and fold gently. The starch binds whatever juice appears inside the dumpling.

  5. Step 5: Shape

Roll the dough to 2 mm and cut circles. Put 3–4 cherries on each, seal the edge firmly and go round it twice — cherries like to burst out.

  6. Step 6: Boil

Cook in a large pan of salted boiling water in batches of 12. Once they float, give them 3 minutes.

  7. Step 7: Serve

Lift out with a slotted spoon, pour over the saved juice and serve with sour cream.

Tips & variations

  • Tip

Thaw frozen cherries completely and drain them well, or you get twice the juice.

  • Tip

Do not overfill: four cherries is as much as the seal will hold through boiling.

  • Variation

Strawberries work the same way, with half the sugar — they are sweeter and juicier.

  • Storage

Freeze raw vareniky in a single layer on a board, then bag them. Cook from frozen, one minute longer.
