Cottage Cheese Vareniky

A cheese filling fails in two ways: dry, when the curd is fat-free, or runny, when it is wet. So use a medium-fat, ready-made smooth curd and drain off the whey, and the filling turns creamy rather than grainy. One egg is enough; more makes it rubbery.

Ingredients

Dough

Filling

Makes: about 50 vareniky

Method

  1. Step 1: Make the dough

Scald the flour and salt with hot water, add the oil, knead and rest under a towel for 30 minutes.

  2. Step 2: Drain the curd

If the cheese is wet, tip it into muslin and let the whey drip for 15 minutes. Wet curd makes a runny filling.

  3. Step 3: Use smooth curd

Use ready-made smooth cheese: the mixture should be even, with no grains.

  4. Step 4: Mix the filling

Stir in the egg, salt and sugar for the sweet version. For savoury, leave out the sugar and add chopped dill.

  5. Step 5: Shape

Roll the dough to 2 mm, cut circles, add a heaped teaspoon of filling and seal the edges firmly.

  6. Step 6: Boil

Cook in batches in salted boiling water. Once they float, give them 2–3 minutes — the edges turn translucent.

  7. Step 7: Serve hot

Pour over melted butter so they do not stick together and serve with sour cream.

Tips & variations

  • Tip

9% curd is the sweet spot. At 5% the filling is dry; at 18% it is greasy and leaks.

  • Variation

Savoury version: curd, dill, a clove of garlic and black pepper, served with fried onion and crisp pork fat.

  • Tip

A spoonful of semolina saves a filling that turned out wet — it absorbs the excess while boiling.

  • Storage

Freeze shaped vareniky straight away; a cheese filling does not like waiting in the fridge for more than an hour.
