Poppy Seed Filling
Dry poppy seeds simply stirred into sugar crunch like sand in a bake and taste of nothing — their hulls will not let the oil out. So the seeds are first simmered in milk and then ground: only after that do they give up the nutty, oily flavour the whole thing was for. The honey is not there for sweetness but for stickiness, so the filling does not spill out of the roll.

What to use instead
For a fasting version replace the milk with water and the butter with two spoons of oil. Keep the honey — it is what binds the filling.

Method
-
Step 1: Rinse the seeds
Cover the poppy seeds with boiling water, leave 5 minutes and drain through a fine sieve. This takes away dust and the bitterness shop-bought seeds often carry.
-
Step 2: Simmer in milk
Put the seeds in a pan with the milk, sugar, honey and salt. Bring to a gentle simmer and cook 15 minutes over low heat, stirring often.
-
Step 3: Wait for the milk to go
It should become a thick paste with no free liquid left. If milk is still pooling on top, give it another 3–5 minutes, or the filling runs inside the roll.
-
Step 4: Add butter and vanilla
Off the heat, stir in the butter and vanilla. The butter disappears into the hot mass in seconds and gives the filling its shine.
-
Step 5: Blitz to a paste
Tip it into a blender and run it for 1–2 minutes to a smooth paste. This is the step that releases the poppy oil; without it the filling stays gritty.
-
Step 6: Chill
Transfer to a bowl and chill for 30 minutes. Cold, it thickens and spreads evenly over dough without tearing it.
Tips & variations
-
Tip
No blender? Pass the cooked seeds twice through a mincer with the fine plate. A coffee grinder works too, but only on dry seeds.
-
Swap
For a fasting version replace the milk with water and the butter with two spoons of oil. Keep the honey — it is what binds the filling.
-
Variation
A handful of raisins or the zest of an orange stirred in at the end is the classic touch for a Christmas poppy seed roll.
-
Storage
Three weeks in the fridge, several months frozen. This is the rare filling that loses nothing at all to being made ahead.
